How to Pass the Time for 7 Solo Days

Matt went out of town last week to head up to a conference in London, leaving me for 7 days. It always bums me out when he goes out of town for longer than a couple days, because let’s face it, I’m marrying the guy so I must enjoy his company! I find it easy to be on my own, though, since I did live by myself for quite some time following college. There’s something nice about cooking whatever you want, whenever you want, and coming and going on your own time; sharing a car down here has produced its fair share of difficulties.

So what does a gal do for a week while her significant other is out of town? Well, for one, the little fur ball and I became the best of friends. I’d always said I would never let a pet sleep in my bed with me, but for a full seven days, the two of us snoozed at night side-by-side. Over the weekend, I also let him play outside quite a bit. At one point, I was in the kitchen making myself breakfast, the sliding door open to the beautiful day, while the kitten stretched out on the patio in the sun just outside of the door. It’s like he knew that while Matt was gone he was supposed to look after me, because he never ventured far from the house during “play time.”

I also cooked some food I’ve been interested in trying, but couldn’t because I knew Matt wouldn’t like it. The crazy guy hates fish, but I love all kinds of fish, shrimp especially as of late. I know it’s not difficult to prepare two different meals, especially if the sides are the same, but I just find it so much easier to eat the same thing – call me lazy. That’s why while he was gone, I finally made a recipe I’ve been interested in trying – Spicy Parmesan Shrimp Skillet, courtesy of a food blog called “how sweet it is.” Not only was the preparation quick and perfect for a weeknight meal, it was tasty and I got my shrimp fix! I wouldn’t say it’s my favorite shrimp dish, though – I still think the shrimp taco recipe I recently  found takes the top spot.

In addition to my time with the General and the modified menu choices catered to my taste buds only, I caught up on some “girly” movies that Matt isn’t really interested in, but that I’ve been wanting to see. My favorite of the bunch? Pitch Perfect. Now, I had my doubts about this movie. It seemed a bit corny and as singing movies/shows go, I’m more of a serious musical fan and less into the “Glee” craze. However, this movie was so entertaining! While it definitely poked fun at the genre, the music was great and the cast was delightful.

Saturday was a particularly gorgeous day, so I went for a run around the neighborhood, read a book on the patio and then grabbed dinner with some friends. Team activities after work kept me busy on a couple evenings, and a lovely lunch was spent with a girlfriend – we had a great time gabbing and catching up. I have to say, I really appreciate my friends who keep me busy while Matt is away. Otherwise, it would be a long week. And as always, I got a great Skype call in with my family, which always fills a lonely night – it’s as though they are there on the couch with me.

All in all, there was nothing extraordinary about being alone for seven days, however, there were some nice changes to the normal routine. However, even though I was able to keep myself entertained, there was nothing better than seeing Matt’s face in the crowd when I’m picked him at the border on Sunday evening. :)

Superbowl Sunday on a Beautiful Weekend

Matt and I spent the weekend rather lazily, because we were blessed with such beautiful weather! I can’t even express how nice it is at the beginning of February to be able to open our windows and doors, watch the kitten play in the garden and just relax. I even sat out in the sun on Sunday for most of the day reading a book! We also cooked some really good food in anticipation for the Superbowl – this is a yearly tradition, even if we find it difficult to stay up to actually watch the game (thanks to the time change). Below I’ll share some photos from our relaxed, but refreshing weekend. The only things missing are dinner at El Estribo (a steak place recently introduced to us by friends) on Friday evening and lunch at the port in Sotogrande on Saturday. All in all, we certainly took advantage of this lovely weekend.

We started our Superbowl Sunday off with a most delicious brunch – dim sum and mimosas! And yes, because brunch basically served as lunch too, there are chips on my plate. ;)

I then took my mimosa from brunch out to our lounge chairs to read…and I didn’t move for hours! I’m totally into this Stephen King book, 11.22.63, where the main character is given the opportunity to travel back in time to prevent the Kennedy assassination. Seriously, I’m devouring it.

I haven’t shared a beautiful photo of Gibraltar from our house in quite some time. While I was preparing our “Superbowl Sunday” dinner, I just happened to look out the window to this site. Breathtaking, isn’t it? You can really see the lights and mountains of Morocco behind the Rock of Gibraltar.

We decided to break-out the Skyline Chili mix that we brought back from Cincinnati for our Superbowl Sunday evening feast! And yes, more champagne, don’t judge us. You can see my Chili dogs on the left, untainted and made just like the folks in Cincinnati do. On the right, you can see that Matt has ruined his with ketchup… ;)

Settling Back Into My European Home

Coming home to a house that hasn’t been lived in for 24 days can cause a massive headache quickly. Even if you clean it before leaving, it’s bound to feel musty and dirty upon arrival, which is exactly how our house felt when we got back from the States. Since we spent the first few days home cleaning and putting all of our stuff away, we were able to spend the weekend doing a little home decorating to spruce up the place to give it a little facelift for the new year.

The first thing we did was decorate the front entryway table. We use the bottom shelf to house our keys, sunglasses, passports, etc., but the top was feeling a little plain. So, we added the “Home Sweet Home” pillow, the candle display in the middle, an elephant (it’s my favorite animal and can be found all over my house) and a picture frame of Matt and his brother with their grandfather.

While out grocery shopping yesterday, I spotted a gorgeous bouquet of flowers filled with whites and yellows and greens and pinks. As much as I love it when Matt buys me flowers, sometimes it’s just nice to buy yourself some instead. My poinsettias were struggling a little after being left unattended for over 3 weeks, so I replaced them with these beauties and my dining/living room area immediately transformed.

Not pictured is a cookbook stand I bought for the kitchen to hold up my favorite Barefoot Contessa cookbook and an old, silver wine bottle coaster that was given to me and Matt by his grandparents immediately following our engagement. Though there is a bottle currently sitting on this, it will stay corked for a little while, because we’re trying to have a “healthier January.” Along with the cookbook, these little trinkets have given my kitchen an extra pizazz.

However, no matter how nice we attempt to make our home, some things about living around here will never change. Sitting in a border queue for an hour means less time spent in my cozy space. Hey, you win some, you lose some…

El General with the Fluffy Butt

For a little Friday fun, I thought I’d give an update on how our adopted kitten is doing since he joined the family on November 3rd. Not a cat person? Neither was Matt until this little cutie joined us. His personality is certainly unique and he’s made me a very happy lady.

To start, we had to leave the General behind for 24 days while we travelled back to the US for the holidays. This extended holiday was the main reason we were so reluctant to adopt him in the first place. I was worried about finding him a decent place to live while we were gone. However, as one of my friends pointed out, “almost anything would be better than living under a fountain in the cold and rain, not knowing where his next meal would come from.” It was that sentiment that pushed us to take him and in the end, everything worked out.

Some co-workers of ours offered to take McFluffybutt for the extent of our stay. They too have a kitten, which I think we all worried might not work out – what if they hated each other?! And to be honest, according to their updates (which I got quite often, pictures included…best cat-sitters EVER), they did have a couple fights. However, towards the end of our stay in America, I started receiving pictures of the two kittens licking each other, snoozing together and chasing each other playfully. Our very own love story.

When we got back, I had a new worry – that he’d be unhappy coming home with us. However, I’m pleased to announce that the General is back to his normal self. He still sits on top of the couch while we eat dinner at the dining room table, hoping that Matt will turn around with a little treat from his plate. He also loves to saunter into our room almost exactly 30 minutes before the alarm is set to go off in the morning, jump onto the bed, and rub his head on my face. If that doesn’t get me up, he’ll start biting my cheeks and nose. He still climbs the couch like a tree (goodbye renter’s deposit) and sits by Matt’s feet while we watch TV so that he can monitor the activities happening outside.

A couple things have changed, though, which I think is just a sign that our little kitten is growing up. You can now scratch his belly without the fear that he’ll attack your hand with his teeth and claws. While he used to only lay on the couch with us at night, he now likes to lay on the soft things we’ve placed on the floor – Matt’s USC blanket, a little bed my Mom sent me back with, etc. Apparently, he also likes to tear things apart now…I found a ripped up tag that used to hang from one of our guest room beds the other morning. I guess it’s doors closed from now on!

All in all, I’m glad our little family is back together. And with neither Matt nor I planning on travelling together for an extended period of time for quite awhile, he can rest happy knowing that at least one of us will be there with him in 2013.

Why I Went Missing – Blame it on tradimo…

You loving my professional picture for the site or what? ;)

It has been entirely too long since I’ve posted, and for that, I am sorry. The reason for my absence is pretty generic – work. However, where that is concerned, it has been a very exciting time. *Shameless plug to ensue.*

For those of you who do not know, my writing skills lend themselves to a company called tradimo.com. tradimo is an e-learning website that teaches and helps users navigate the financial trading waters. When I started with tradimo back in January 2011, we did not yet have a website, we had concepts for articles and my team was a lot different than it is today. Over the course of that year, and official in November, we launched our website with our beginning focus on a forex school. We now have loads of content, were featured in the German Financial Times and our forum is teeming with people who love to talk about the financial markets.

Since January, I’ve helped tradimo edit their content as it was created, focusing mainly on whether it was beginner-friendly. My basic knowledge of trading in the beginning was minimal at best. Now, I help coordinate and write the news, work with my team to come up with new ideas and I continue to edit the content where necessary. Our team has grown and so have our users! It was around November that I believe I dropped off the map here on the blogosphere, because we were working endlessly to get the website up and running.

I tell you all of this because: 1.) I am extremely proud of the work we’ve done and the content we’ve produced, so if you have a chance, check it out! 2.) I wanted you to know that in its own way, this has become one of my European adventures. However, I promise that with the New Year, I’ll come back into the blogging scene and share the comings and goings of 2013. Since it is my second year in Spain, I think I’ll be enjoying the Spanish flavour with a new perspective.

In the near future, some topics I can’t wait to discuss include…

  • General McFluffybutt – If you do not remember, The General is a kitten that joined our family and made me the happiest girl in the world! I love, love, love him.
  • Our engagement party – My sister, Melissa, hosted a gorgeous, amazing and ridiculously fun engagement party over the holidays. Did I mention it was amazing?!
  • Wedding plans – I’ve got a few things nailed down, like the venue, the cake and the band. I’m looking forward to sharing the details of the day! October 19th here we come.
  • All things Spain and Gibraltar – When we landed back in Spain after 3 weeks in the US recently, we were greeted by warmth and sunshine. I have a feeling 2013 in Spain is going to be great.

As promised, I now give you the tale of how a kitten came to be part of our family…

We eat at La Finca, the Thai fusion restaurant in our neighborhood, quite often. If you are a follower of this blog, you’re saying to yourself, “Oh yeah, I’ve heard that name a time or two.” Well, it was during a meal there one evening that we noticed a kitten lurking about. One of the owners told us he’d taken up residence in the tree in their front courtyard, and while we were there, he kept scampering underneath a stone fountain. Week after week he continued to reside in their courtyard, while talks of us adopting the kitten were thrown onto the table. Neither Matt, nor I, were 100% sure it was a responsibility we wanted to take on.

When the weather started to take a turn for the south, however, I started to change my mind. It became chilly overnight and the Andalucian rains started to roll in. We’re talking constant downpour. The thought of this little kitten living out in the cold, wet wild made me sad. Then, I also remembered that La Finca closes for two months in the winter and I thought, “who will feed him when they’re closed?!” I finally voiced my thoughts to Matt, who agreed that adopting the kitten maybe wasn’t such a bad idea…on one condition. Matt told me we could adopt the kitten if he could pick his name. Thus, the plan to make General McFluffybutt a member of our family began.

With the help and advice of our friends, and fellow cat owners (they have 4!), Damon and Jo, we hatched a plan to rescue the little guy on Saturday night. They let us borrow their kitten crate and we went armed with tuna. Unfortunately, part one of the plan didn’t exactly go off without a hitch – General McFluffybutt wasn’t there! The owners of La Finca, though, were more than happy to take the crate, corral him when he finally turned up, and give us a call to come get him. About 30 minutes before we were to head out for dinner at Kamakura, they called.

We brought General McFluffbutt home to a fully pimped out “cat home.” In anticipation for his arrival, Matt and I bought a three story climbing tree, a scratching post, a comfy bed, toys, food, litter box and everything a kitten could need. I was nervous our first night with him – but he popped right out of the crate and started sniffing around. By the end of the night, I was snoozing with him in my arm.

That isn’t to say it hasn’t been a little touch and go. To be expected, he’s a little anxious about his new surroundings. He likes to run to the basement and hide under the couch, for example. Yet by the end of the day on Sunday, the three of us were watching movies on the couch. He was stretched out, purring, sleeping and playing. The past two mornings, he popped out of his bed as soon as I filled his bowl with food and began eating immediately.

And as I watched the pouring rain and whipping wind outside the other night, with the General safely passed out against my leg, I was so happy to know that he would never be stuck in that again. Keep your fingers crossed, though, that his tests for diseases comes back negative on Thursday! I’ve bonded with him too much to get any really bad news.

Birthday Celebrations

My birthday was last Friday and boy did I have a wonderful weekend! It wasn’t the crazy affair of years past – the further I age and leave college in the past, the more energy I lose for celebratory occasions. I guess that’s all part of the process, right? Nonetheless, I had a great time celebrating with Matt and a couple of friends over the weekend, and to top things off, our little family of two became a little family of three. :)

Friday was my actual birthday, so I went into work as usual. Matt surprised me with a bunch of co-workers at the end of one of my meetings – they busted in with cakes and candles, and even sang “happy birthday.” My dear friend Tina brought the cakes and her two kids whom I adore, so that was a great surprise (thanks Tina!). It is now that I want to mention that my birthdays for the past two years have been quite uneventful. Last year, we had just moved to Spain and were settling in, so we didn’t really know anyone very well yet. I wasn’t working and so Matt and I enjoyed a nice meal out and then went home for a “night cap” while watching a movie. The year before that, I had just moved to Dublin, so it was a bit of the same. I didn’t really have good friends yet, so the two of us went out for dinner then back home. This was the first year in three years that we didn’t move, so it put a huge smile on my face to have friends make my day special in the office.

Friday night, Matt and I went out for tapas at one of my favorite spots, Pura Tapa. Since it was pouring rain, the inside was packed and by the time we got there, it was standing room only. That was okay with us, because the atmosphere was fun and the service standing at the bar was much quicker than it would have been had we been sitting at a table. We enjoyed some of our favorite dishes, some wine, and then went home to veg on the couch and watch a movie. I guess you could say we were keeping tradition alive.

The next day, Saturday, we joined a couple of our friends for sushi at a Japanese restaurant, Kamakura. We sat at the habachi grill and watched as the “master chef” lit things on fire and prepared a fantastic meal. I love the sushi there, especially the tempura roll, so by the time dinner was over, I was full and saying that we should eat there more often. Though their food is way overpriced, it is excellent for special occasions.

Though dinner was amazing and the company was great, I think we were all itching to get home. You see, before heading out to dinner, we made a stop at La Finca to collect a special package that would become the newest addition to the Lauck/Primeaux family. I’ll leave you with a picture, but there will be more to come on that tomorrow. ;)

Over the weekend, our company hosted a Halloween party. I’m not typically a huge Halloween fan. Please don’t hate me, but I’m not a huge fan of dressing up – or fancy dress as they call costume parties over here. Whether it be laziness or just lack of creativity, I can’t seem to get into the spirit of Halloween. Last year, I feigned illness on the day of the company Halloween party so that I wouldn’t have to go. Yep – just like a little kid, I pretended to be sick.

In an effort not to miss out on a party with free food and beverage, I decided I’d try a little harder this year. Matt and I talked for awhile about what we wanted to go as, but it didn’t hit me until the day before. Matt loves to wear suits, so I figured he could go as a devil. Why a devil in a suit, you ask? There have been “imitations” of the devil in movies where he is in a suit, so I figured he would get to wear his suit and be dressed up at the same time. I bought him devil horns and a pitchfork, and then he accented it with red sunglasses. Naturally, I decided to go as his counterpart, an angel. I bought myself some wings and a halo, wore a white dress with a silver belt and silver shoes, and attempted to get as much glitter on my face as possible – I was a tiny bit unsuccessful there, but the rest of the outfit came together nicely.

The party itself ended up being quite fun, much to my Halloween-hating surprise. We have some pretty creative co-workers: there was a couple that went as Legos that even fit together through well-placed Lego-sized holes in the back of her costume – they won best couple costume; a couple friends of ours went as Axl and Slash from Guns N’ Roses – her wig was epic, and paired with the rest of the get-up, she won best female costume; there was a couple with zipper faces that were so realistically creepy, that he won the prize for best male costume; and then, of course, you had your black cats and zombies and witches galore.

Matt and I didn’t stay late. I’m still recovering from a pesky back injury, so by the end of the work week filled with pain, I was exhausted and ready for my comfortable bed. I have to say, though, I was pleasantly surprised with our Halloween outing. Usually the Scrooge of Halloween, I actually tried this year and didn’t have a bad time.

When it Rains, it Pours

I know this saying is usually reserved for events – as in, you have a bad day at work and then on the way home, you get in a minor car accident: “when it rains, it pours.” However, I’m using this catch phrase in a more literal sense. I’m finding that down here in the Spain/Gibraltar region, when it rains, it literally pours. It’s let up since last week, but I’ve been holding onto a couple of pictures that really represent how our area was affected by inclement weather.

Clearly, a region that is referred to as the Costa del Sol doesn’t expect to receive much rain. However, I’ve been told by people who have been here a long time that winter is often associated with rain. Apparently, there was a year that it rained from October until the beginning of April – almost every day. Well, we noticed the effects of heavy downpour last week and if the weather plans on doing the same thing this year, we could be in for some problems. Flooding is a major problem in our area – the dirt parking lot we use every day flooded last week and is still trying to dry out. Side streets in La Linea were completely filled with water and as we drove home on Friday, the main street we use to get to Gibraltar even had some problem areas. I heard that in Malaga (about an hour up the coast from us), people died in floods.

I don’t know what the weather has in store for us this winter, but as much as I love rain, I’m not a fan of flooding.

Exploring the Outdoors

I’m on a horse!

I really needed this weekend. For some reason, by Friday, I was just beat; I even said so to my boss towards the end of the day. My brain had turned off and all I wanted to do was crawl into bed and not move. Luckily, I have friends who didn’t allow me to be quite so lazy…

Friday night (after a tiny nap – sue me!), Matt and I ventured out to meet some friends for dinner at none other than our resident hot spot, La Finca. As always, the company was fantastic, the food was wonderful, and the setting was perfect for my mood. After all the rain last week – which I still happen to love – there is nothing like sitting in the cozy warmth of a perfectly decorated thai restaurant by the open front door as rain hits the pavement. Just thinking about it makes me feel all cuddly. ;)

We didn’t make it a late one on Friday, though, because I had my first horse-riding lesson to go to the next day. Now, I’ve ridden horses before. For example, back when I visited Matt in Ireland for the first time before moving there, we went horse-riding in the hills near Killarney. However, my experience is limited, so when a friend mentioned that she was going to start taking lessons, I asked her to count me in. Located in the San Roque Club by our house, the stables are run as an Equine Therapy (therapeutic riding programmes for disabled people) center and the proceeds they receive through lessons and such go completely toward maintaining the center. How great is that? We signed up to take only this one lesson first, and if we liked it, we planned to sign up for five more.

Well, we ended up loving it! Though the first lesson was pretty basic in nature (walking, trotting, standing in the stirrups, etc.), it was exactly what I needed. Our instructor was great, not easing up on us for one second. She constantly yelled out instructions to each of us. By the time we finished the lesson, we were completely different riders than when we started (well, I was at least!). She was also pretty entertaining – at the end, she made us swing around in our saddles and took us back into the stables riding backwards on the horse. I’m hoping that as our skills progress, we’ll get to venture out of the ring and onto some paths.

After the lesson, Matt and I stocked up on groceries and spent the remainder of the day watching the first season of Homeland (we’re a couple of crazy cats, I know). With the weather being cloudy and cool, a “movie day” seemed perfect. We just happened to substitute movies with Homeland and I am certainly glad we did. Not only did I need the rest (by the end of the work week, I’d even convinced myself I might be getting sick), but what a great show to get into!

A perfect afternoon for nine holes!

On Sunday the weather started to take a turn for the better. The temperatures were fairly mild and the sun was starting to work its way out into the open. I mentioned that it would be nice to do another outdoor activity since the horse-riding lesson had been so much fun. Matt and I decided to hit some golf balls at the driving range, but as we drove over to the Alcaidesa Links Golf Resort in our neighborhood, we decided to play nine holes instead. It ended up being the perfect afternoon to play – the temperature was just right, the course wasn’t too busy, and man were the views spectacular! We’ve lived here an entire year, so I can’t believe this is the first time we’ve played this course. It wraps through the hills and extends next to the ocean, providing beautiful shots towards Gibraltar and Africa. I ended playing pretty well considering it’s been awhile since I picked up a golf club. In nine holes I had two pars and a birdie, which I’m going to log into the books as a successful day!

To finish off our lovely weekend, we watched NFL football, ate bbq chicken wings with a side salad topped with ranch dressing, and enjoyed one final evening of relaxation before heading into another busy work week. I hope we keep up with these outdoor activities, because as much fun as laying on the couch or in bed sounds (my initial plan), I actually felt more rejuvenated by the end of this weekend by getting out there. I’ll keep you posted on how future riding lessons go, if I’ve got any other television series to recommend, and I hope you had a great weekend as well!
