It’s Friday, which means it’s time for me to sprinkle you with random thoughts and happenings in our neck of the world. The mundane makes me happy, so these are the things making me happy right now!

I keep trying to start books, but then I don’t finish them. This is so not like me and my Book Club portion of the blog is starting to feel neglected. So, I recently started reading A Game of Thrones. I promised myself when I started it that I would finish it! That won’t be very hard, because it happens to be fantastic. I’ve only seen a couple episodes of the television series, so I must say, they really hit the nail on the head there. However, the book is better. That’s usually my mantra anyway – the books are almost always better! While I usually prefer to have the book in hand, I’ve tiptoed into the E-Book world and I have to say, it’s so convenient. I wanted to read this book, I bought it on the Ipad, and voilà, it was there! Don’t fret; this does not mean I’m giving up the paperback for good. And how haunting and chilling is this awesome art by Izabela Bratkowski that I found at Comics Cavern?!

Okay, it’s a little out of my comfort zone to pose solo for my blog. But I really got into my Spring Wardrobe post and was inspired to get some new slacks while waiting for my family to arrive last weekend. Now, I can’t even begin to stylistically pose like my fashion blog inspirations, but I don’t write a fashion blog, so I figure it’s okay! I had Matt take these before heading to work to point out a few things. 1.) Oh how I love my Mulberry bag! While she was here, Melissa inspired me to tie a scarf onto my bag for added color. So cute! 2.) These are two new pairs of slacks: a yellow and a blue. The yellow is a more relaxed fit, and you can’t see with the blue, but it came with an adorable brown belt. 3.) These are the only two pairs of sunglasses I own, but I love them. Jessica Simpson collection aviators on the left, gifted to me by my sister. Ray Ban sunnies on the right, gifted to me by Matt!

I will be making these this weekend! These are bacon-wrapped water chestnuts and they are as delicious as they sound. Matt and I make them almost every time we host friends at our home. They are incredibly easy to prepare and just as easy to eat. We soak our water chestnuts for at least in hour in soy sauce. We then wrap them with bacon, sprinkle with a little brown sugar, and bake under the broiler until they are golden and gorgeous! Matt and I just love having appetizers for a meal, which means living in a country where tapas rule sure suits us!

I apologize for the poor quality in this photo, but the lighting was low and it was taken with a phone. However, I have to share this because Matt and I found a new restaurant that we’ll be frequenting A LOT. It is called La Finca and it is located just outside of the entrance to our town. I’ve mentioned before that there are currently no open restaurants in our town and that there isn’t much to choose from close-by. La Finca is a Thai restaurant that’s popular in the area, but has been under construction for the past few months. Last night we drove by on a whim only to find that it’s reopened! I won’t divulge too much, because I plan on going back soon to do an entire post about it. I will tell you, though, that the food was fantastic… :)

Party at the Casa de Matt and Emily

In December, Matt and I hosted a gathering at our new home to “break in the house.” It was such a fantastic night and man did we make a ton of food. We’ve wanted to have another shindig, but with jam-packed schedules in January and February, we never got around to it. Last night we finally opened the doors yet again to our friends and hosted a lovely evening filled with finger food, champagne, and beautiful weather.

At our first party in December, I felt like I barely had the opportunity to leave the kitchen and mingle. We were over-ambitious with our menu and our guest count was at least double to the attendance last night. I spent the majority of the evening refilling the table and stirring up new batches of taco meat and appetizers. This time around we planned a little bit better and put together a finger food menu. Every item on the list could be made ahead of time and kept in the refrigerator. All we would have to do is add things to the oven throughout the night. It ended up being fantastic planning, because this time, from the very start, I was able to sit with my friends and chat with a glass of champagne in hand. I kept an eye on the food and got up and down as the food on the table got low.

On the menu? I’ve made most of it in the past, which kept things easy (Ina Garten always says the key to party-planning is to stick with what you know and do best). So, we put out bacon-wrapped water chestnuts, bacon and cream cheese crescent rolls, sour cream and ranch dip, queso in the crock pot, and buffalo chicken bites. All came out perfectly as they always do and were crowd-pleasers. I added a couple of new recipes to the list that I found on a couple of my favorite blogs. On First Look, Then Cook, I stumbled across spinach bites and just had to experiment. I loved the green color added to a mix and who doesn’t love a recipe made with stuffing? On Cupcakes and Cashmere, Emily made mac and cheese cups for her Oscar party and they looked just too delicious not to try. Thanks to these trusty bloggers, I added some new appetizers to my arsenal and they did not disappoint!

Like always, I made way too much food! But it’s better to have too much than not enough, and it just means we had fabulous left-overs today! All in all, it was a fantastic evening. The weather has been perfect, so we spent most of the time on the patio. One of our guests brought his dog and it was so fun watching him run around our yard in pure bliss. It’s always great to get-together with friends and last night was no exception. I can’t wait for the next shindig!

Solo Saturday

Ah, Saturday. The first full day of the weekend when no work needs to be done and you can laze around in your pajamas until you feel ready to change to sweats. Of course, there are some weekends when you have plans – travel, gardening, shopping, visiting with friends, etc. But every once in awhile a Saturday will roll around when you open your eyes late in the morning and say, “I’m going to be lazy today.”

Well, this past Saturday I did even better than that. I haven’t had much time alone since I started working again, except for the few days I had the flu. (I don’t count those days, though, because I felt miserable.) I love working and being out of the house, so this hasn’t been a bad thing, but I went from being alone most of the time, to being alone none of the time. So you can imagine my excitement when Matt told me last week that he’d be golfing with a group on Saturday morning. I immediately began listing off activities that I wanted to do while he was gone: make brunch with bacon and mimosas; preferably eat said brunch on the patio, depending on the weather; catch up on television shows that only I watch; do girly things like paint my nails or dance to music around the house while I do laundry and such. I can honestly say with successful pride that I accomplished all of these things, and more.

Matt had an early tee time, so I slept in as late as my body would allow – 11:00. And thus commenced “Emily’s Solo Saturday.” I immediately went down to the kitchen, made myself a mimosa, and threw some bacon onto the skillet. Meanwhile, television shows only I watch – The Bachelor, Pretty Little Liars, The Vampire Diaries – streamed on my computer as I sliced fresh strawberries with the patio sliding door wide open. I took my brunch to the patio, realizing that the weather was perfect.

Following brunch, I took nail polish, magazines, and more mimosa mix to the lounge chairs by the pool to get some sun. I also turned on my classical rock mix on the stereo system and pointed it out of the open sliding doors to the patio. The first song that played? Eric Clapton’s “Layla.” :)   Now, we haven’t been able to enjoy the pool since we moved in because we moved into the house in November. Now that the weather is warming back up, I’m so excited that we can actually use our yard. More exciting is that with my family coming in March, it seems very likely that we’ll get to hang by the pool while they’re here!

Long story short, “Emily’s Solo Saturday” was a great success. Funny enough, though…around 3:00, I started to anticipate Matt’s arrival home. As much as I loved my mid-morning/afternoon charade, I started to miss my other half. Maybe next time I can include him in the brunch-making morning fun…

The Lemon Crepe & Coffee Co.

The Lemon Crepe & Coffee Co. - a definite must-eat for anyone travelling through Dublin.

I am one of those “eat now, workout later” type of people. When I eat, I want my food to be delicious. I mean, we only have one life to live, so why waste it on foods that leave your taste buds feeling forlorn or mistreated? Now, I’m not saying one should overindulge or overeat, or even disregard healthy foods. Matt and I cook plenty of foods that contain our fruits and vegetables, and for the most part, I’d consider myself a pretty healthy person. I’m also a foodie who loves to try new things, so today I finally ventured into the Lemon Crepe & Coffee Co. on Dawson Street.

It is actually sort of crazy that I’ve been living in Dublin for almost a full year now and I’ve never eaten here. With it’s bright orange decor, situated on one of the busiest streets in the city – one that I walk down almost every day to work – it just screams, “eat here!” It’s always busy, probably due to the fact that it’s seconds from the Trinity College campus, or partly because the food and coffee is, to say it simply, awesome. I met my friend Caroline today at the Lemon Crepe & Coffee Co., for somewhat of a bittersweet lunch. She is moving back to New York and also had never eaten at this delectable spot, so we needed to check it off her bucket list. At the same time, it’s no fun saying goodbye to a friend. What a better way to do it than with savory crepes in a festive atmosphere.

Neither Caroline nor I are big sweet eaters, so we both chose a savory dish for our lunchtime treat. I ordered the Mexicano crepe, which included mature cheddar, streaky bacon*, guacamole, chili sauce, and tomato. Exactly what a Texas gal needs, right?! Caroline’s crepe was filled with egg, spinach, swiss cheese, and mushrooms. Both were piping hot, straight off the skillet, and oozing with goodness. In fact, my crepe was one of the most delicious things I’ve sunk my teeth into in a long time. All of the flavors were perfect, each bite just as good as the last. I would even go as far as to say that I’d go back for a sweet snack; maybe something with chocolate, or banana, or coconut, or maple, or strawberry. You name it, they’ve got it. Along with their long list of sweet crepes, their savory list includes a Philadelphia beef crepe, breakfast crepes, a smoked caesar crepe, and ingredients from tuna to pastrami to chili. Wow.

We didn’t sample one of their many coffees, but you can bet I’ll be back soon for one. If you’re travelling through Dublin, Lemon Crepe & Coffee Co. is a must. Whether it be for breakfast, lunch, dinner, or a quick snack on the go, it is vibrant with energy and great food, right in the heart of the city!

*For my American friends back home, streaky bacon here is more like the bacon we eat in America. In Ireland they have “rashers,” which is one of their forms of bacon – it’s a bit thicker and fattier.
