I was browsing Cooking Light’s website for dinner ideas yesterday before heading off to the grocery store and stumbled across an interesting recipe. I had a hankering for fish and saw this shrimp taco recipe with a home-made green apple salsa. The combination of olive oil, lemon juice, lemon rind, apples and jalapeños seemed like a unique mixture (what do I know, I’m no chef connoisseur) so I thought I’d give it a shot. At only 300 calories, it was definitely worth taking a shot!

Both Matt and I were sceptical as I threw this dish together, which only took about 30-40 minutes. For one, I don’t like corn tortillas, but I decided to stick to what the recipe called for. Secondly, the apple “salsa” didn’t seem like a salsa at all – even Matt commented as I mixed it together that it didn’t look especially appetizing. I told him that you can’t judge a book by its cover and that there was nothing else in the kitchen to serve in its place, so we were having this green apple salsa. Matt skipped the shrimp (not a huge fish-lover), which I’d foreseen – instead, I bought him a flank steak that he could grill up in no time. 

Any previous worries I had that this dish wouldn’t satisfy our taste buds was quickly crushed when we took our first bite. These tacos were so good! The sweet of the apple mixed with the spicy of the jalapeño and savoury of the shrimp was incredible. According to Matt, the steak went with the green apple salsa just as well, declaring the meal a huge success. Though I have all of our groceries purchased for the rest of the work-week dinners, I think a quick trip to the supermarket before the weekend is in order. I see shrimp tacos for Saturday/Sunday lunch in my near future!

Home-made Pizza

Our home-made pizza straight out of the oven!

Here’s the thing about Spain, and in particular, the town we live in – delivery pizza doesn’t exist. Go on, I’ll give you a moment to think about that.

Pizza is just not the same over here. In Ireland, we had Domino’s, and we could even order the pizza online and then track the order like the Domino’s back home. Who doesn’t love to order a pizza for delivery on a rainy night, or for a football game, or just because? Well, after a year of living in Spain, we’ve done tons of research into the ability to order pizza to the house, and it just doesn’t seem to be an option. The pizza places we’ve contacted either don’t deliver, or won’t deliver to our town, Alcaidesa. Therefore, we’ve come up with our own solution: home-made pizza!

Don’t get too excited, though – I don’t make the dough on my own. That’s just a feat I’m not willing to tackle any time soon. After all, how many baking posts have you seen on my blog in all 200+ posts? I actually discovered a pizza-making kit at Morrison’s that works time and time again. It includes the dough, which just needs to be rolled out, and the sauce. It makes two small, square pizzas and any time I make it over to Morrison’s in Gibraltar, I pick it up. The expiration date on it also allows us to keep it for awhile before needing to use it, so I usually stock up on a couple. ;)

Last night, we pulled out the pizza-kit for a quick and easy dinner. Though not the same as delivery, we still get to choose exactly what goes on the pizza and the preparation is simple. We put together a simple combination last night – cheese and salami. We also sprinkled a bit of oregano and red chili flakes on top for added flavor. Thanks to our convection oven (which are a staple in Europe), the cook time was quick and we were eating in no time. From start to stomach, the process most likely took the same amount of time that a delivery would have with an end result that was just as yummy.

The Lemon Crepe & Coffee Co.

The Lemon Crepe & Coffee Co. - a definite must-eat for anyone travelling through Dublin.

I am one of those “eat now, workout later” type of people. When I eat, I want my food to be delicious. I mean, we only have one life to live, so why waste it on foods that leave your taste buds feeling forlorn or mistreated? Now, I’m not saying one should overindulge or overeat, or even disregard healthy foods. Matt and I cook plenty of foods that contain our fruits and vegetables, and for the most part, I’d consider myself a pretty healthy person. I’m also a foodie who loves to try new things, so today I finally ventured into the Lemon Crepe & Coffee Co. on Dawson Street.

It is actually sort of crazy that I’ve been living in Dublin for almost a full year now and I’ve never eaten here. With it’s bright orange decor, situated on one of the busiest streets in the city – one that I walk down almost every day to work – it just screams, “eat here!” It’s always busy, probably due to the fact that it’s seconds from the Trinity College campus, or partly because the food and coffee is, to say it simply, awesome. I met my friend Caroline today at the Lemon Crepe & Coffee Co., for somewhat of a bittersweet lunch. She is moving back to New York and also had never eaten at this delectable spot, so we needed to check it off her bucket list. At the same time, it’s no fun saying goodbye to a friend. What a better way to do it than with savory crepes in a festive atmosphere.

Neither Caroline nor I are big sweet eaters, so we both chose a savory dish for our lunchtime treat. I ordered the Mexicano crepe, which included mature cheddar, streaky bacon*, guacamole, chili sauce, and tomato. Exactly what a Texas gal needs, right?! Caroline’s crepe was filled with egg, spinach, swiss cheese, and mushrooms. Both were piping hot, straight off the skillet, and oozing with goodness. In fact, my crepe was one of the most delicious things I’ve sunk my teeth into in a long time. All of the flavors were perfect, each bite just as good as the last. I would even go as far as to say that I’d go back for a sweet snack; maybe something with chocolate, or banana, or coconut, or maple, or strawberry. You name it, they’ve got it. Along with their long list of sweet crepes, their savory list includes a Philadelphia beef crepe, breakfast crepes, a smoked caesar crepe, and ingredients from tuna to pastrami to chili. Wow.

We didn’t sample one of their many coffees, but you can bet I’ll be back soon for one. If you’re travelling through Dublin, Lemon Crepe & Coffee Co. is a must. Whether it be for breakfast, lunch, dinner, or a quick snack on the go, it is vibrant with energy and great food, right in the heart of the city!

*For my American friends back home, streaky bacon here is more like the bacon we eat in America. In Ireland they have “rashers,” which is one of their forms of bacon – it’s a bit thicker and fattier.

Food for Thought

It has taken 4 full days to decide which would be the best first post for the New Year. I could go on and on about my time with my family and friends in sunny Dallas, including my complete euphoria to be running outside again. I could add a Game Day post to the lineup with all of the college football going on, but I figure the start to a year shouldn’t dwell on the end of another. I could even tell you about a fantastic and magical book I read awhile ago, Water for Elephants, coming soon to theaters, but I figure I’ll save it for a nice movie comparison.

After much debate today, and a bit of writer’s block, I’ve decided to do a twist of a book review. The twist refers to the review of choice: a cookbook. A cookbook, you ask? If you really do follow my blog, you know that Matt and I have been doing a lot of cooking over in Dublin. We love to spend a chilly Friday night cooking a new and hearty meal. And, of course, there was Thanksgiving. I’ve become a bit fearless in the kitchen, because really the worst that could happen would be the creation of a poor tasting meal, in which I’d just throw it out and order in. Over the break I’ve been watching the Food Network and thumbing through my Mom’s seemingly endless supply of cookbooks looking for fun and interesting recipes.

I spent the day flipping through my new favorite, Ina Garten’s Barefoot Contessa at Home. I’ve always loved her show; she has such a calming voice and she’s a great teacher. Not to mention her home is to die for and her impressive garden supplies most of her vegetables and herbs. Her cookbook does not disappoint either. It is so clean, crisp, and easy to read; the photos are beautiful and represent the results fantastically; and the recipes appeal to both novices and professionals alike. It is more than a cookbook, too. At the beginning of each section, there is some sort of blurb on other note-worthy topics: how to create a grocery list, how to design a kitchen, planning your menu, etc.

I became more excited the further I read, because each and every recipe seems completely do-able for someone like me who is starting to expand their cooking repertoire. Also, Ina cooks with more herbs and less onion. In fact, she hardly even uses onion, which is perfect for my household. Matt completely despises onion, limiting my everyday menu. Another excitement factor: she makes baking seem less scary. For those of you who cook like me – you eye up your ingredients as you cook – her baking section actually makes me want to give it a shot. Peanut Butter and Jelly Bars? Now that is something I’ll try.

To give you more of an idea why this is such a great purchase, here’s a rundown of some of the recipes that intrigued me the most.

1. Caesar Club Sandwich – Imagine everything that is amazing about a caesar salad, add pancetta, sun dried tomatoes, and ciabatta bread, and I’m salivating. Did I mention you homemake the caesar dressing? Yum.

2. Chicken Salad Véronique – A very green chicken salad with green tarragon, green celery, and green grapes. And assembly is so simple!

3. Eli’s Asian Salmon – I wish Matt liked fish, because I am now dying to make this.

4. Zucchini Pancakes – She had me at pancakes! I just love a twist on vegetables, because face it, they’re not always what we reach for first.

5. Pear, Apple, & Cranberry Crisp – I already mentioned the Peanut Butter and Jelly Bars, but her fruit desserts peaked my interest just as much.

I could go on and on – there’s even a breakfast section including homemade Bloody Marys!  However, the only way for you to truly appreciate her masterpiece is to purchase it yourself. In fact, this copy belongs to my mother, who will not part with it, and understandably so. Not to worry. I plan on buying my very own copy!

Black Tie and Christmas Cheer

I’m sad to say it’s been well over a week since my last post. Between my work at Suas, submission of my first published article (yea!), events, and Christmas extravaganzas, I’ve been a very busy gal. I’ll try to hit the key points as best I can, especially our main event of the season, because it’s officially time to rededicate myself to my readers. Why call this a “series of Emily’s European adventures” if I don’t chronicle them?

Last week held a variety of activities for me, including drinks with girlfriends, fundraising for Suas by way of street collecting in Christmas hats, an appointment with a dress designer to pick the perfect one for Matt’s company Christmas party, and pampering galore for the same gala. Not to mention that Christmas is just around the corner, leaving me with very little time to shop before heading home for the holidays. By Friday I was pretty exhausted, so a night in with Matt to rest before the big party was in order.

Saturday finally rolled around, bringing with it Matt’s company Christmas party, a night that was highly anticipated as I was absent the year before. Held at the Burlington Hotel in Dublin, the party was a black tie gala complete with a poker tournament and 4-course meal. For the event, I wore a one-shoulder, long, midnight blue dress with matching roses stitched into the strap. My hair was pulled up into a classic chignon and I completed the look with a mix of pearls and gold jewellery. Matt looked extremely dapper in his black tuxedo, bow tie, and pocket watch (a gift from yours truly).

Matt played in the poker tournament, drawing the attention of the entire crowd when he made it to the finals and eventually won it for his team. After the tournament came dinner in the beautiful winter-themed dining hall. The meal itself started with a goat cheese appetizer, potato leek soup to follow, a choice of chicken or beef main course, and a multitude of desserts.  The whole time the wait staff kept the wine flowing, while classic Christmas music mixed with an array of soft jazz completed the ambience. Matt and I sat at a table with a few friends and made some new ones, and by the time dinner was over, we were ready to move onto round 2 – of 3 rounds – for the evening.

Following dinner, DJs took to the stage to provide music for dancing, while an open bar made itself available to all. Cuban cigar rollers, who were actually flown in from Cuba, rolled unique and individual cigars for anyone interested. That was something even I, who is not an avid cigar smoker, could not pass up. Matt and I rotated between the throng of smokers outside, to watching the dancers inside until it was time for round 3.

At dinner - unfortunately this was the only picture I got. But a friend took a better one that I'll post when I receive it!

Round 3 was an after-party at the club downstairs. I can only say so much about this aspect of the evening. What I will leave you with is a mental picture of people in formal wear, thumping music, expensive champagne, and extremely good times. We didn’t head home until 6 in the morning – that’s right, 6 in the morning. Needless to say, Sunday was spent either in bed or on the couch and I was asleep very early Sunday evening. It was well worth it though; I had a fantastic time, enjoyed spending it with Matt and our friends, and I now have a gorgeous gown to wear to another event!

Warm and Cozy

Cozy and warm Saturdays are becoming my thing. This is thanks to Matt, who after a long, hard week at work, prefers to relax and unwind. Now that I am busy every day with either Suas or Women’s Club activities, I’ve joined him in his desire to recuperate. Even more so, the weather has really taken a turn for winter, so our warm apartment set at the bottom of foggy mountains, keeping me safe from the rain, becomes more and more appealing with each day. Yesterday, warm and cozy took on a whole new meaning, as Matt and I celebrated our very first Christmas tree unveiling as roomies!

Like most days this month, Matt and I awoke to very cold, very rainy weather. I wanted to stay huddled under the warm comforter all day, but I had plans to make one of my favorite meals, courtesy of my favorite cook – my mom. The closest grocery store is part of a major department store in the mall – Marks and Spencer – so to the mall we went in search of ingredients. I’ve mentioned prior that Christmas season is in full swing here, so when we took the escalator down towards the grocery store, we were bombarded with lights, decorations, and seasonal deals. I could literally feel Matt’s irritation rise, since the area was packed with people and noise. Realizing that it would be next to impossible to drag Matt back to mall again before Christmas, we decided to purchase our Christmas tree early. Add the fact that we will be back in Texas for awhile in December, shortening our time to enjoy our own decorations, and it was a no-brainer to get Christmas started early.

We plan on going back to get even more lights :-)

Thus began our cozy and warm Saturday. Once back at home with groceries, a Christmas tree, lights, and ornaments, we put college football on the television, changed into our college jerseys, and popped open a couple of beers. The Christmas tree was first, and actually didn’t take us too long. We purchased a green and bushy artificial tree and got to work spreading the branches so as to make it look fuller. Matt strung the lights and I started placing our silver ornaments in just the right places. One thing I learned from my mom is that you can’t just put an ornament on a tree; it takes care to make sure they are spread out evenly and hanging just right. Once finished, we admired our handiwork in the darkness of the apartment.

I then went to work making a hearty and heart-warming dinner. My mother’s chicken and rice recipe is so easy and I’ve been craving a bit of home lately, so that landed on the Saturday evening menu. It’s a simple combination of butter, celery, carrots, onion, flour, chicken broth, rice, diced chicken, and a dash of cream to make a stew that really sticks to your ribs. The smells emanating from the kitchen while I sauteed the vegetables and added the chicken stock was enough to make my stomach grumble. The best part was that the final product tasted exactly like my mom’s, making me feel like I was having a meal in Texas.

Dinner followed with football and red wine, a win for both the Sooners and the Trojans, and a beautifully lit Christmas tree in the corner. Matt really liked the meal, adding a successful tick on my cooking resume. Like I said, I’m getting used to these comfy and cozy Saturdays. I have a feeling next weekend will be no exception.
