I’m on a horse!

I really needed this weekend. For some reason, by Friday, I was just beat; I even said so to my boss towards the end of the day. My brain had turned off and all I wanted to do was crawl into bed and not move. Luckily, I have friends who didn’t allow me to be quite so lazy…

Friday night (after a tiny nap – sue me!), Matt and I ventured out to meet some friends for dinner at none other than our resident hot spot, La Finca. As always, the company was fantastic, the food was wonderful, and the setting was perfect for my mood. After all the rain last week – which I still happen to love – there is nothing like sitting in the cozy warmth of a perfectly decorated thai restaurant by the open front door as rain hits the pavement. Just thinking about it makes me feel all cuddly. ;)

We didn’t make it a late one on Friday, though, because I had my first horse-riding lesson to go to the next day. Now, I’ve ridden horses before. For example, back when I visited Matt in Ireland for the first time before moving there, we went horse-riding in the hills near Killarney. However, my experience is limited, so when a friend mentioned that she was going to start taking lessons, I asked her to count me in. Located in the San Roque Club by our house, the stables are run as an Equine Therapy (therapeutic riding programmes for disabled people) center and the proceeds they receive through lessons and such go completely toward maintaining the center. How great is that? We signed up to take only this one lesson first, and if we liked it, we planned to sign up for five more.

Well, we ended up loving it! Though the first lesson was pretty basic in nature (walking, trotting, standing in the stirrups, etc.), it was exactly what I needed. Our instructor was great, not easing up on us for one second. She constantly yelled out instructions to each of us. By the time we finished the lesson, we were completely different riders than when we started (well, I was at least!). She was also pretty entertaining – at the end, she made us swing around in our saddles and took us back into the stables riding backwards on the horse. I’m hoping that as our skills progress, we’ll get to venture out of the ring and onto some paths.

After the lesson, Matt and I stocked up on groceries and spent the remainder of the day watching the first season of Homeland (we’re a couple of crazy cats, I know). With the weather being cloudy and cool, a “movie day” seemed perfect. We just happened to substitute movies with Homeland and I am certainly glad we did. Not only did I need the rest (by the end of the work week, I’d even convinced myself I might be getting sick), but what a great show to get into!

A perfect afternoon for nine holes!

On Sunday the weather started to take a turn for the better. The temperatures were fairly mild and the sun was starting to work its way out into the open. I mentioned that it would be nice to do another outdoor activity since the horse-riding lesson had been so much fun. Matt and I decided to hit some golf balls at the driving range, but as we drove over to the Alcaidesa Links Golf Resort in our neighborhood, we decided to play nine holes instead. It ended up being the perfect afternoon to play – the temperature was just right, the course wasn’t too busy, and man were the views spectacular! We’ve lived here an entire year, so I can’t believe this is the first time we’ve played this course. It wraps through the hills and extends next to the ocean, providing beautiful shots towards Gibraltar and Africa. I ended playing pretty well considering it’s been awhile since I picked up a golf club. In nine holes I had two pars and a birdie, which I’m going to log into the books as a successful day!

To finish off our lovely weekend, we watched NFL football, ate bbq chicken wings with a side salad topped with ranch dressing, and enjoyed one final evening of relaxation before heading into another busy work week. I hope we keep up with these outdoor activities, because as much fun as laying on the couch or in bed sounds (my initial plan), I actually felt more rejuvenated by the end of this weekend by getting out there. I’ll keep you posted on how future riding lessons go, if I’ve got any other television series to recommend, and I hope you had a great weekend as well!

Mundane Musings – Olympic Edition

A happy Friday and Olympic Opening Ceremony day to all of my readers! Despite the upbeat and perky introduction to this post, I am tired today. After a long work week, Fridays can be pretty tough. However, they signify the beginning of the weekend which I am so looking forward to! Between the start of the Olympics with the opening ceremony and events, a full weekend of sunshine, and a great book to read, I’ve pretty much figured out the best way to re-energize before next week.

A beautiful, early morning view before heading off to work. While the clouds seem a bit dark, I can assure you that this is an early morning phenomenon and that it is currently bright and cloudless. I will say, though, that it rained for about 15 minutes the other day, and during that time, we all stood at the windows in shock. I kind of miss the rain that I became so accustomed to in Dublin – is that strange?

Matt in red/white/blue with an American flag that is currently hanging in his office. I’m telling you, we are extremely patriotic, so excited for the Olympics, and not afraid to share it with all of our European friends! Bring on the competition!

Weekend Wrap-Up

Over the weekend, Matt and I decided to experience what Alcaidesa and Gibraltar have to offer during the summer months, which started Friday in Gibraltar immediately following work. The Euro 2012 (soccer for you Americans!) is currently the forefront of entertainment and competition over here, so we joined a large group of our German friends to watch the Germany vs. Greece game. I’ll tell you what – there is nothing quite like watching two countries battle it out. While we take sports in America very seriously, Europeans leave nothing on the table when it comes to loyalty for their nation’s team. Our viewing party took place at Savannah’s in Gibraltar, situated on the marina in Ocean Village. The restaurant is currently operating a huge outdoor television and by the start of the game, the entire surrounding area was packed – it was a good thing we had a reservation! Germany ended up winning the match and in the process, I learned some “colorful” German cheering language.

Saturday greeted us with cloudy skies, much to my dismay. We had plans for friends to come over with their children to swim and it just didn’t look like it would be in the cards. Instead, Matt and I made a big trip to the grocery store to stock up on food and drink for the weekend and following work week. Luckily, the sun came out for a bit during the late afternoon, so we did a bit of sunbathing and swimming. For dinner, we grilled out another recipe courtesy of Eat, Live, Run, and once again, we were not disappointed. The steak and veggie kabobs with a creamy avocado dipping sauce were incredible. I got to use my food processor, which always make me idiotically happy, and Matt’s marinade for the steak was superb.

Following dinner, Matt and I made our way down to the restaurant at the bottom of the hill. Our plan was to watch the Spain vs. France match with the locals, followed by some nighttime partying on the beach. As for the match – a couple pints, warm outdoor seating and a Spanish win made for a delightful evening. We even ordered a plate of broiled tuna to feed to the stray neighborhood cats that were lurking around the patio. Following the match we walked down to the beach to see what was going on for La Noche de San Juan, and unfortunately, there really wasn’t much happening. However, the beach bar was in full-swing with pumping music and late night party-goers, so we joined in on the fun. We chatted with some other Alcaidesa residents and stayed out a little past our bedtime. ;)

Sunday gave us brighter weather, so we had our friends over for the promised swim. There really is nothing cuter than two little ones laughing and splashing around in a pool. Thanks to the planned pool day, Matt and I now own an array of pool toys, most notably a pair of water guns that pretty much ensured not a single person would leave the yard dry – especially not after the kids learned how they work.

After a full weekend, Sunday evening was spent quietly, and that’s exactly what we needed. We used the leftover steak and vegetables from our skewers the night before and turned them into quesadillas, adding cheese and sour cream to the inside, and again using the avocado dipping sauce as a very nice compliment on the side. We opened all of the doors to let the breeze in and settled in to watch the England vs. Italy game. Unfortunately, England wasn’t as lucky as Spain and Germany, because their tournament dreams ended on penalty kicks. Alas, I wasn’t even able to make it to the conclusion of the game…I fell fast asleep midway through the second half. Apparently beach bars and a day of sunshine with adorable and lively children was enough to zap my energy.

My Reasons to Like Monday

Ah, the end of a weekend and start of another beautiful Monday. It’s no secret that most people loath Mondays, because they mean the next weekend is oh so far away. I’m not really minding this Monday, though. For me, it means sitting back down and really delving into writing. It’s lots and lots and lots of coffee, because I’ve given up the typical weekend “sleep ’til eleven” mentality. It also means I have a whole week to start reading a new advanced reader’s copy I have in my possession. There is something extremely fun about knowing that I have my hands on a book that has not yet been released to the masses!

So, to start off a new week of inspiration and creativity, this is what I’m currently loving:

One Hot Holiday

It’s been a busy past few days, and while I’ll admit my last post contained quite a bit of fluff, there is plenty to catch up on. We had a great 4th of July weekend, tons of family visits, and yesterday Matt had his second hip surgery in 3 years. We’re now in full recovery mode, with tons of couch activity, television, and blogging in between my care-taking. First things first, though…

Fireworks, America, Weekend, LakeMatt and I started our 4th of July weekend at my parent’s home in McKinney with a nice, relaxed day by the pool. I’m not quite used to this heat anymore, so I think my days of “laying out” may be over. Now, I float. With a beer in hand, sunshine, and cool water, it was the perfect Saturday for these two Europeans who had not quite kicked our jet-lag. Dinner was the cherry on top – steak, potatoes, creamed corn, salad, garlic bread, and strawberry pound cake for dessert…followed by a food coma.

Sunday we made our way down to Cedar Creek Lake to visit with Matt’s family, where I finally met his aunt in person; we’d met on Skype a couple times previously. The gals talked books, because Matt’s aunt is the Director of Development for the Colorado State University Libraries, and was previously President of the America Library Association – therefore she receives all kinds of advance reader copies of all the best books that she most generously shares! For a reading fanatic, it’s pretty awesome when I get to read a book before it’s been released to the public. Along with the books and lots of good food, Michael’s puppy, Foster, did a lot of swimming in the lake, and it was another relaxing day. The fireworks were the best part of this day, because pretty much everyone on the lake sends up great shows, making the skyline a bright array of colors. And, I have this neat “fireworks” setting on my camera that I finally got to use!

Yesterday, Matt went in for his hip surgery. He had this same procedure 3 years ago, but due to a rare bone regrowth in his hip, he needed it again. He went to a different surgeon this time that seemed more hopeful that with the surgery and the following treatment, we could prevent the growth and this might be the last time he needs surgery. As far as post-surgery goes, we are getting some full-on quality time together and we’ve learned that at 7 in the morning, the Tour de France is pretty much the only thing on tv. ;)
